Wilderness; a new three-storey bar and kitchen in Northern Quarter

Inspired by a love of food, drink, travel and people, Wilderness Bar & Kitchen is bringing a taste of Scandi life to the Northern Quarter.

Located on the old Folk & Soul and previously Odd site, Wilderness is a bar and kitchen spread across a massive three floors. Each floor has a different vibe; the ground floor is chill, laidback and the perfect spot for a craft beer or a highball cocktail on tap. The first floor is an interactive cocktail bar with an intimate, cosy feeling – it’s the perfect spot to try a seasonal cocktail. Whilst the basement is home to an ‘innovation room’ where diners can sample innovative dishes, mainly cooked over coals. It will also be a creative space where menu development will take place in the day and a private chef’s table will be available to book at night.

Wilderness has been created by the faces behind popular Manchester venues such as Crazy Pedros, Liars Club and Bunny Jacksons, who also own Wilderness record store in Withington. Mof Grimmes, record buyer for the store will be the in-house DJ for the bar and kitchen so you can expect some excellent tunes. It’s obvious that any new bar or restaurant opening in the heart of the Northern Quarter has to do something different to stand out from the crowd. The concept here is an interesting one - Scandinavian style paired with a modern European menu and seasonal cocktails. To us, it sounds like a winner.

The menu, carefully crafted by Ex-Manchester House chef James Lord, features Scandi-influenced small plates. It’s a short menu featuring just , but perfectly developed to encompass the very best of modern European cuisine. You can expect the likes of BBQ Lamb Skewers, Miso Glaze + Lamb Fat Yeast Flakes, Cured Seabass, Heritage Tomato, Elderflower + Pickled Green Strawberry and Pine Smoked Aged Duck + Lavender Honey. The menu is dictated by freshness and quality; it is constantly evolving ensure the very best seasonal produce is always used to it’s full potential.

The cocktails are made using both traditional and modern techniques to present striped back drinks that put produce first. The seasonal menu created by Adam Day features homemade ingredients and infusions, coupled with the finest spirits around. All of the cocktails are thoroughly described on their menu, which is a work of art in itself.

Wilderness is a game changer and a much-welcomed newbie on the Northern Quarter food and drink scene. It opens today (15/08/2019), so get yourself down there and enjoy the very best of European small plates, seasonal cocktails and Scandinavian vibes.
